Our recipe is designed for a 1.046 OG 10 gallon batch, assuming 75% efficient mash. IBUs clock in around 182. Holy crap.

Mash Method

For this brew we were able to make use of a new remote thermometer probe that we just left inside the mash tun. As such, we were able to control the temperature without contributing to heat loss by opening the tun to measure.
Unfortunately, there was a bit of a chase in temperature as we found there were many hotspots inside (and our strike water temp was too high). We did wind up having to open it a lot to mix it up well. Overall, however, we believe we were well within range for a good mash.
Once the hour of mashing was up, we vorlaufed for twenty minutes, then lautered into the boil pot. We sparged with five gallons of ~190° water. Mixed it up, vorlaufed for another twenty minutes. Lautered into the boil pot. Sparged with 4.5 more gallons. Mixed, vorlaufed for 20, lautered.

Brew Method

It actually took a while to get to boil, but we were able to get a hot break with MINIMAL boil over (there wasn't a ton of headspace in the pot). We lost maybe a few spoonfuls. Shucks. Regardless, we were then able to proceed as such:
T=60min
Added 5oz Chinook (14%AA)
T=30min
Added 3oz Chinook (14%AA)
T=15min
Added 2 tspn Irish Moss
T=0min
Killed the heat, hooked up the counterflow chiller and drained the boil pot into the two fermenters. Our OG wound up being 1.044, yielding a 72% efficient mash. That's pretty kick ass.
Fermentation

We got our ten gallons of 1.044 wort bubbling away in a appropriately heated nook upstairs. Pretty awesome.

Transferred to secondary fermenters, and added 1oz of Cascade to each fermenter.
Bottling
May 2, 2010
Today was bottling day yay! Our FG was 1.010, yielding an ABV of 4.68%. In all, we garnered 48x 22oz bottles and one half-gallon growler. Wowzers!
Notes
- Strike with water ~165° as opposed to 175°.
